Sunday Night Blues

How is it Sunday already?  Please someone explain this.  Although this weekend was not a busy weekend like the past weekends have been, I feel more exhausted.  Seriously, I feel like I have ran a marathon or accomplished some astonishing task; neither of them happened haha.  I am going to blame this on Daylight’s Savings time and one less hour of sunlight.  Am I the only one feeling this way?? Anyways, I could have used an extra day.

Today I have taken the time to recharge for the upcoming week.  This past week at work was absolutely nuts.  I am talking about multiple hours of over-time and working through lunches.  So I wanted to take time today to relax and get things organized for the week ahead.  Oh, and sleep in!  Sleeping in until 8:30 this morning was a real treat.

How does everyone use their Sundays to prepare for the week ahead?  Personally, I like to spend my Sunday morning/afternoons cleaning and organizing my apartment.  There is just something about waking up to a clean place on a Monday morning.  I also try and cook a big, hearty meal.  On the menu tonight, pork chops and potatoes.  Seriously, it is going to smell amazing in here real soon.

In addition to cleaning, I like to spend an hour or so of uninterrupted time to myself (unplugging when we live in a world of technology is great).  Lately, I have been reading a book called, “The Passenger” by Liza Lutz. The story line is about a girl on the run from her past; changing identities and moving through out the United States.  I am not quite half-way through yet but it is a page turner! I would highly recommend picking this book up. Add a glass of wine and you have yourself a nice relaxing night!

If anyone has tips for beginner level food prep, I would love to start adding that to my Sunday routine especially for making lunches for the upcoming week.  Any tips?
